Gobbo di Gerb is sheep cheese typical of Gerbido, a town in the upper valley of Cuneo.
It's thin and light gray crust darkens after the first few months of ageing, tending to a pale brown. Over the months, aged in natural caves on wooden boards (from the fir tree), a natural pink mold forms that makes each shape unique.
Ingredients: Sheep's milk, curd and salt.
It goes well with medium-bodied red wines
